Guacamole
Serves 3-4
Episode 13 - Butter of the Gods. In this episode, we learn about the most wonderful Mexican fruit, the avocado. I present it's most classic presentation, Guacamole, and offer a chance to learn alternative recipes. This is part 1 of 2. For more, visit www.thefirehousechef.com.

Fuel:
Avocados (3)
Purple Onion (½ cup)
Garlic (2 cloves) minced
Jalapeno (1) diced
Cilantro (¼ cup) roughly chopped
Lime Juice (1 lime)
Salt and Pepper
Tools/Vessels:
Medium bowl
Mesh strainer
Large Spoon

Tactics:
Dice avocados and mash to a chunky consistency. Add ½ lime juice to avocados to prevent browning. Dice onion and soak in ice-cold water bath for approximately 5 minutes. Meanwhile, dice tomatoes, garlic, jalapeno, and chop the cilantro. Add dried onions, tomatoes, garlic, jalapeno, cilantro, and lime juice to the avocados and mix. Salt and pepper to taste. Serve immediately or refrigerate for up to a week.
